it’s fall … make a great chicken recipe!

this week i’m heading to beautiful new york state and i get the opportunity to pop in to spend some QT (quality time) with some of my very favorite people in the world.  that would be the prendevilles!  

in honor of that, i’m going to repost susan’s awesome chicken recipe from last year.  you must know that it was and still is my #1 most looked-at post!

hi, my name is susan

and i am lucky enough to be “the appreciator’s” sister in law and ROF’s sister. she asked me to share a recipe and since i would do anything for her, i agreed. leave it to the appreciator to invite guest bloggers – always the includer.

dear trish – my sister in law on my husband’s side – made this dish when we visited years ago and it has become a family favorite. i selected this recipe because i wanted the opportunity to tell you about (appreciate) trish.

she is a gentle soul and one of the best listeners i know. one of the things i like best about her is the way she shows me things. trish tells the story and holds the thing in her cupped hands in a way that conveys her treasure of it. i can always feel her feelings… when she shows and tells.

trish has given me:

household tips “use a pumice stone to remove the hard water stains in your sink, toilet or tub”

advice “your husband can be your best friend, mine is”

thoughtful gifts – a beautiful tree bark birdhouse

and recipes – italian chicken rolls ups

mostly what she has given me is acceptance and friendship

and boy oh boy, is that ever precious to me.

trish’s italian chicken and love roll ups

thin sliced chicken breasts

mozzarella cheese, sliced

flour

egg and water, beat

bread crumbs

butter

parmesan cheese

pasta

marinara sauce (I buy prepared or you could make your own, lol)

roll thin chicken and a slice of cheese and secure with a toothpick. dredge each roll in flour, then egg and water and then bread crumbs. place rolls in a baking dish, sprinkle with parmesan cheese and put a small pat of butter on each. you don’t need to add love separately, if you have gotten this far, it is already in there.

bake @ 425* for 20-25 minutes. cook the pasta separately and heat the sauce.

i add a vegetable or salad and italian bread for a yummy meal. this is my husband mike’s and my son bill’s favorite meal. i have made it for them many times. i have also made it ahead of time for a buffet, to pop in the oven for 50 people. the point… it is easy and a good recipe for few or many.

    These look fantastic! And I actually have all the ingredients in house so I’m going to try this over the weekend. That’s also a pretty fantastic picture of Susan- a perfect cover shot for her cook book! Thanks for sharing, Susan!
